Chuckpotle Encore is a 3-day dining event hosted by Chuck’s Table, a pop-up eatery that is using the space at Rock Frites in Haebangchon for this limited time. From Thursday, April 16 to Saturday, April 18, the venue will be serving up amazing burgers, ribs, chili dogs, fries and a chili recipe that the owner claims as:
THIS CHILI is the BEST CHILI in Korea. I assure you. I’ve had a few challengers, but no real contenders. I’ve had restaurant owners that tried to get their chefs to recreate this chili. They couldn’t do it. There are recipes you can find, but the recipes that win awards have secrets only chili-makers know about.
It is thick. It is meaty. Steaks have been sacrificed to bring you this chili. It has a little kick, but it is smoothed out by the salty texture of the other components. I RECOMMEND trying it with my Creme Fraiche (home made French Sour Cream) as you see in the picture. It completes the chili. It will change the way you think about Chili forever. Trust.
